Homemade Ginger Ale

When holiday shopping season is in full swing I always end up buying a few things for myself. I don’t skimp on gifts for the loved ones on my list, so come January my credit card statement is a bit of a financial reality check.

For a while I had resisted buying a Sodastream, but the day after Thanksgiving an email appeared in my inbox touting designer Yves Behar’s sleek version of the gadget, Source. In a few clicks the purchase was complete, and now I don’t know how I functioned without a constant supply of sparkling water.

Instead of experimenting with readymade soda mix-ins, I made my own ginger syrup. This spicy and refreshing ginger ale had a definite kick and will be the first of many homemade sodas.

Homemade Ginger Ale
Adapted from Ming Tsai

Serves 4

2 cups ginger slices, peeled (1/8 inch thick)
2 cups sugar
2 cups water
1 quart soda water
1 lime cut into wedges

In a medium saucepan bring the ginger, sugar and water to a slow simmer. Allow the mixture to simmer until it has reduced by half and is a syrupy consistency. Strain the warm syrup and allow it to cool.

In a tall glass with ice add a ratio of 1 part ginger syrup to 7 parts soda water. Squeeze in a lime wedge and add more syrup if desired.
