Arugula Pasta with Arugula Pesto

Red Pepper Flakes Salt Pepper




Mince the garlic cloves in a food processor.

Add the arugula, walnuts, Parmesan, lemon juice, red pepper flakes, salt and pepper.

Finely chop all the ingredients.

With the food processor running, slowly pour in the olive oil until the pesto is combined.

Cook the pasta until al dente according to package instructions. Save 1/2 cup pasta cooking water and then drain.

Warm the pesto in a skillet over medium heat for 1-2 minutes.

Stir in the pasta and the reserved cooking water. The pesto will turn a little creamy.

Fold in the arugula leaves and lemon zest.

Top the pasta with grated Parmesan before serving.
