Berry Baked  Steel-Cut Oatmeal

Oat Milk

Coconut Oil

Steel-cut Oats

Cinnamon Baking powder Salt

Nut butter

Water

Frozen Berries

Vanilla Extract

Maple Syrup

Ground Flaxseed

Combine the ground flaxseed and water in a small bowl. Whisk to combine. Let the mixture sit while you prep the other ingredients.

Combine the coconut oil and peanut butter in a large microwave-safe bowl. Microwave on high for 30 seconds to melt. Then them stir together.

Whisk in the rest of the wet ingredients: oat milk, maple syrup and vanilla extract. After that stir in the flaxseed-water mixture.

Combine the dry ingredients including steel-cut oats, chopped almonds, cinnamon, baking powder and salt.

Pour the wet ingredients into the dry ingredients. Stir everything until the mixture is fully combined.

To start assembling the berry baked steel-cut oatmeal, pour the mixture into an 8-inch square baking dish. 

Scatter the frozen berries on top. You can use fresh berries instead. Frozen berries will spread more throughout the baked oatmeal.

Bake in a 350-degree F oven for 40-50 minutes until the oatmeal turns deep brown and puffs up. It should still be a spoon-able consistency.

Divide the oatmeal into bowls. Add a splash of oat milk and top with additional fruit, nuts and cinnamon.
