Roasted Broccolini Zucchini Pasta Salad

Toss the broccolini and zucchini in olive oil, salt and pepper and spread across a sheet pan.

Preheat the oven to 400 degrees F.

Roast until the broccolini is crisp at the edges and the zucchini is tender, about 20-25 minutes.

Whisk the lemon juice, white wine vinegar, olive oil, salt and black pepper.

Make the vinaigrette

Combine the pasta with the roasted broccolini, zucchini, pasta, scallions, parsley and feta, tossing in the vinaigrette.

Assemble the salad.
