To make the dressing, whisk the ginger, garlic, tahini, lime juice, soy sauce, salt and pepper.

Cook the soba noodles in boiling water following the recommended cook time on the package.

Use tongs to transfer the cooked noodles to a bowl of cold water. Then drain them.

Stir together the soba noodles and the tahini dressing.

Add the cabbage, carrots, peppers, scallions, cilantro and sesame seeds to the noodles.
