Scatter the thyme sprigs on top.

Preheat the oven to 250 degrees F. Put the tomatoes and garlic in a baking pan. Pour in the olive oil and season with red pepper flakes, salt and pepper.

Roast the tomatoes for 2-3 hours. The tomatoes should be wrinkled and very juicy.

· Stir them into pasta · Put them on pizza · Spoon them onto bread · Pair them with fresh mozzarella or burrata · Add them to cooked grains
