Chickpea Greek Salad

Toss the tomatoes & chickpeas in olive oil, salt & pepper on separate sheet pans.

Roast until the tomatoes are wrinkled, and the chickpeas are crispy.

Whisk together the lemon oregano vinaigrette.

Combine the tomatoes, chickpeas, feta, cucumbers, olives, onions & parsley. 

Stir in the vinaigrette.
