Carrot Salad with Tahini Vinaigrette

Carrots

Lemon

Pistachios

Scallions

Garlic

Olive Oil

Salt & Pepper

Cilantro

Tahini

Maple Syrup

Cumin

Use a knife or a julienne peeler. You can also use a box grater or food processor and shred the carrots.

Peel the carrots and cut them into matchsticks.

In large bowl, combine the carrots, scallions, pistachios and cilantro.

Make the salad.

In a small bowl, whisk together the garlic, tahini, lemon juice, maple syrup, cumin, salt, black pepper and olive oil.

Make the vinaigrette.

Pour the vinaigrette into the salad, stirring to coat all the carrots.

Dress the salad.
