Tomato Basil Pasta

Balsamic Vinegar

Slice the bottom ends off the tomatoes. Puree the tomatoes, by grating them, cut side down, on the large holes of a box grater. Discard the skins.

Heat the olive oil in a large skillet or sauté pan over medium heat.

Sauté the garlic, red pepper flakes, salt and pepper until fragrant, about 30 seconds to 1 minute.

Pour in the tomatoes and balsamic vinegar. Simmer the sauce until it thickens, about 12-15 minutes.

While the sauce is simmering, cook the pasta in a large pot of salted boiling water until al dente following package instructions. Drain and save 1/2 cup cooking water.

Stir the pasta and reserved cooking water into the tomato sauce.

Take the pan off the heat and stir in the basil leaves and Parmesan cheese.
