Fresh Carrot Pasta

Puree cooked carrots in a food processor.

Mix 3 eggs with 1/2 cup carrot puree.

Mix in flour & salt.

Process until the dough forms.

Let the dough rest.

Cut the dough into 4 pieces.

Roll out the dough using a pasta machine or rolling pin.

Let the pasta sheets rest. Cut with a pasta machine or a knife.

Cook in salted boiling water for 2 minutes. Sauté in garlic & olive oil.

Season with salt & pepper. Finish with parmesan & fresh herbs.
