Grilled Halloumi & Mixed Vegetables

Olive Oil



Yellow Squash


Red Peppers

Red Onion


Salt Pepper

Whisk together the olive oil and lemon juice. Then brush it on the halloumi.

Preheat a grill on high heat. Oil the grates.

Then brush the mixture on the zucchini, yellow squash and peppers.

Stir the salt and pepper into the remaining lemon oil.

Grill the halloumi until it has grill marks, about 3 minutes per side.

3-4 minutes per side for peppers and onions  2-3 minutes per side for zucchini and squash.

Grill the vegetables until they have grill marks all over.

Arrange the halloumi and veggies on a serving plate and sprinkle with chopped parsley.
