Whisk together the olive oil, white wine vinegar, garlic, salt and pepper.
Stir in the cooked orzo.
Toss the zucchini, squash, peppers & onions with olive oil, salt & pepper.
Grill the vegetables until they are charred and have grill marks on both sides.
Dice the grilled vegetables.
Fold the grilled vegetables and parsley into the cooked orzo.
