Cut the potatoes lengthwise into 1/4-inch-thick slices.

Toss the potatoes and garlic with olive oil, salt & pepper and spread across a sheet pan.

Roast at 400 degrees F until the potatoes are golden brown.

Mash the garlic with a fork and mix with the chopped herbs and olive oil.

Toss the potatoes with the garlic herb oil.
