Lemon Herb Wild Rice Salad

Parsley Chives Scallions

Wild Rice

Arugula

Olive oil

Vegetable Broth

Lemon

Garlic

Pistachios

Mustard

Salt Pepper

Warm the olive oil in a large pot over medium heat. Sauté the white parts of the scallions for 2 minutes until they soften.

Pour in the wild rice and vegetable broth. Bring to a boil. Cover, reduce heat to low and let the rice simmer until it is tender, about 45 minutes.

After the rice has finished cooking, let it stand covered for 5 minutes and then fluff it with a fork.

To make the dressing, whisk the garlic, mustard, salt, pepper, lemon juice and olive oil in a small bowl.

Stir the dressing into the wild rice.

Add the lemon zest, scallion greens, arugula, pistachios, parsley and chives. Then stir the salad together.
