Rotini or Fusilli Pasta

Kalamata Olives Red Onions


Red Wine Vinegar

Oregano Red Pepper Flakes Salt & Pepper

Bell Peppers

Cucumbers Tomatoes




Olive Oil



Cook the pasta in salted boiling water according to package instructions until al dente. Drain and rinse with cold water in a colander.

In a large bowl, combine the pasta, tomatoes, cucumbers, peppers, olives, red onions, Parmesan and chopped parsley.

To make the vinaigrette, whisk the minced garlic, oregano, red pepper flakes, salt, pepper, honey, mustard, red wine vinegar, lemon juice and olive oil.

Drizzle the dressing into the salad. Stir it together to make sure it is well combined.

Optional additions include:

Diced salami or pepperoni Chopped or shredded chicken Chickpeas Hard-boiled eggs Diced avocados Sliced pepperoncini
