Cook the soba noodles in boiling water according to package instructions. Rinse them in cold water in a strainer.

Whisk together the soy sauce, rice vinegar and sesame oil.

Heat the olive oil and saute the mushrooms over high heat.

Add the bok choy stems, white parts of the scallions, garlic, ginger, red pepper flakes, salt & pepper. Continue sautéing until fragrant.

Stir in the soba noodles and sauce, letting it bubble.

Fold in the green parts of the scallions and the bok choy greens.
