Mushroom Corn Pasta

Save 1/2 cup cooking water. Then drain the pasta in a colander.

Cook the pasta in salted boiling water according to package instructions until al dente.

Heat the olive oil in the skillet over medium high heat.

Sauté the mushrooms and corn for 5 minutes. Let the mushrooms brown and caramelize and the corn turn bright yellow.

Add the white scallions, garlic, salt and pepper, cooking until fragrant, about 1 minute.

Stir in the penne. Let the water bubble with the ingredients and coat the pasta.

Add the reserved pasta cooking water.

Fold in the scallion greens, parsley and Parmesan to finish the pasta.
