Salt Pepper Red Pepper Flakes

Olive Oil

White Wine Vinegar

Use a sharp knife to slice the kernels off the ears of corn.

Combine the olive oil, vinegar, garlic, red pepper flakes, salt and pepper.

Make the vinaigrette.

Let the salad sit and marinate for 30 minutes.

Stir the corn, tomatoes and white scallions into the vinaigrette.

Stir in the scallion greens and parsley right before serving.

You can also add: - Arugula or spinach - Diced avocados - Diced cucumbers - Chopped walnuts
