Put the tomatoes, garlic, olive oil, thyme, red pepper flakes, salt and pepper into a baking pan.

Preheat the oven to 250 degrees F.

The tomatoes will be wrinkled and very juicy.

Slow roast the tomatoes for about 2 to 2-1/2 hours.
