Tortillas

Preheat the oven to 400 degrees F. Whisk the chili powder, cumin, garlic powder, onion powder, paprika, oregano, salt, pepper, lime juice and olive oil in a large bowl.

Stir the bell peppers and red onions into the marinade. Toss them around, so they are well coated.

Spread the vegetables across 2 parchment paper-lined sheet pans. Make sure to leave the excess marinade in the bowl.

Roast the peppers and onions until they are browned at the edges, about 20 minutes. Rotate the pans halfway through roasting.

Stir the black beans in the leftover marinade in the bowl.

Serve the fajita veggies with warmed tortillas, black beans, mashed avocado, cilantro, cheese and yogurt or sour cream.
