Panko Breadcrumbs





Preheat the oven to 350 degrees F. Toss the zucchini and squash with salt in a colander. Wait 10 minutes. Then dry it off with a towel.

Stir together the breadcrumbs, Parmesan and olive oil in a bowl.

Warm the olive oil in a large skillet over medium high heat.

Sauté the onions until they start to soften, about 3-4 minutes.

Stir in the garlic, oregano, red pepper flakes, salt and pepper. Continue cooking for 1 minute until fragrant.

Stir the zucchini and squash into the onions and garlic.

Sprinkle the breadcrumbs & Parmesan over the zucchini and squash.

Bake the casserole until it is lightly browned and the zucchini and squash slices are tender, about 25-30 minutes.
