Tofu Pumpkin Curry

Saute the tofu until lightly golden. Then remove it from the pan.

Saute the chopped onions.

Add the red peppers.

Add the red curry paste, garlic, ginger and spices.

Pour in the coconut milk and vegetable broth and simmer the curry.

Stir in the kale letting it wilt.

Add the tofu back to the pan and finish simmering.
