Whisk together the marinade: lime juice, vegetable oil and lots of spices including cumin, chili powder and more!
Toss bell peppers and red onions in the marinade.
Spread the veggies on a sheet pan and roast at 400 degrees F.
Stir minced garlic, cilantro and black beans into cooked brown rice and divide into serving bowls.
Top the rice with roasted bell peppers and onions.
Served with chopped cilantro and sliced avocados.
