Roasted Red Peppers
In a large bowl, whisk together the egg whites, milk, kosher salt and black pepper.
Preheat the oven to 350 degrees F. Grease a 12-cup muffin pan with non-stick cooking spray.
Fill each muffin cup equally with baby spinach leaves and chopped roasted tomatoes or roasted red peppers.
Add the crumbled feta and minced chives.
Pour in the egg whites so the cups are close to three-quarters full.
Run a paring knife around the cups as needed to release the egg white bites from the pan.
Bake for 12-15 minutes until the eggs and are just set.
