Baked Feta with Zucchini, Corn & Tomatoes

Toss the zucchini, corn & tomatoes with olive oil, salt & pepper.

Bake until the veggies start to brown at the edges. Then add the feta & garlic to the sheet pan.

Continue roasting until the zucchini & corn are browned and the tomatoes are wrinkled. Broil the feta.

Serve with pearl couscous, rice or farro.
