Black Bean  Quinoa Salad

Lime

Olive Oil

Avocado

Cumin Salt Pepper

Quinoa

Bell Peppers

Black Beans

Grape Tomatoes

Scallions Cilantro

Water

Radishes

Jalapeno

Simmer the quinoa and water for about 12 minutes. Let stand covered for 5 minutes. Fluff the cooked quinoa with a fork.

Make the quinoa on the stove.

Whisk together the lime juice, olive oil, jalapenos, cumin, salt and pepper in a large bowl.

Make the dressing.

Stir the quinoa into the dressing.

Make the salad.

Add the black beans, bell peppers, tomatoes, avocados, radishes scallions and cilantro.

Stir everything together, so the veggies, beans and avocados are mixed evenly in the quinoa.
