Garlic Ginger

Brown Rice

Sesame Oil

Broccoli

Scallions

Peas

Edamame

Eggs

Rice Vinegar

Soy Sauce

To make the sauce, combine the soy sauce, sugar, ginger, garlic, sesame oil and rice vinegar in a small bowl.

Warm oil in a skillet over medium high heat. Stir in the broccoli, edamame, peas and scallions. Cook without stirring for 4-5 minutes. Then sauté for 2 minutes.  Transfer the veggies to a bowl.

Reduce the heat to low and warm a tablespoon of oil in the skillet. Add the eggs, salt and pepper, stirring until soft curds form.

Stir the rice and soy sauce mixture into the eggs. Spread them across the bottom of the skillet. Cook without stirring for 4-5 minutes.

Fold the broccoli, edamame, peas and scallions back into the rice. Give them a few minutes to warm.
