Preheat the oven to 425 degrees F. Line 2 sheet pans with parchment paper. Put the cauliflower florets in the bowl of a food processor.

Pulse the cauliflower until it is finely chopped into rice.

Spread the cauliflower rice on one of the pans. Bake for 15 minutes, stirring halfway through roasting.

Put the cauliflower on a piece of cheesecloth or a dish towel. Gather the ends to make a pouch and then squeeze out the liquid.

Combine the cauliflower, egg, almond flour, Parmesan, mozzarella, garlic powder, oregano, salt and pepper in a bowl.

Stir together the ingredients into a dough that you can shape.

On the other sheet pan, press the dough into a 10-12-inch diameter circle that is 1/8-inch thick.

Bake the crust for 20-25 minutes until it turns golden brown.

Spread on the tomato sauce leaving a 1-inch border. Sprinkle with mozzarella cheese.

Turn the broiler on high. Broil the pizza for 2-3 minutes to melt the cheese. Drizzle with pesto before serving.
