Powdered Sugar

Vegetable Oil

Eggs

Granulated Sugar

Cocoa Powder

Flour

Vanilla Extract

Unsweetened Chocolate

Baking Powder

Kosher Salt

Melt the chocolate in 30-second blasts in the microwave. After each time, stir the chocolate to distribute the heat.

In a small bowl, combine the eggs and vanilla extract. You don't need to whisk them together.

In a another bowl, combine the flour, cocoa powder, baking powder and both salts.

Stir together the granulated sugar and vegetable oil using an electric mixer.

Mix in the melted chocolate.

Beat in the eggs one at a time. The mixture will look very glossy.

Stir the dry ingredients into the wet ingredients until fully combined. Cover the bowl and chill the dough for 3 hours in the refrigerator.

Preheat the oven to 350 degrees F. Portion out the dough into balls. Roll them in powdered sugar and place them on a parchment paper lined sheet pan about 2 inches apart.

Bake the cookies for 11-12 minutes, rotating the pan just over halfway through baking. Let the cookies sit on the baking sheet for a couple minutes. Then transfer to a wire rack to cool.
