Preheat the oven to 350 degrees F. Combine the oats, sesame seeds, pistachios, cinnamon, cardamom and salt in a bowl.

In a medium saucepan, warm the olive oil, maple syrup, honey, tahini and vanilla extract over low heat.

Pour the wet ingredients into the bowl with the oats, seeds and nuts. They should be evenly coated and damp.

Press the granola onto a sheet pan lined with parchment paper. It should be tight and compact.

Bake the granola until it is golden brown, about 20-24 minutes. Loosely cover the edges with foil if they start to brown too quickly.

Wait for the granola to cool completely. Then break it into chunks. You can eat it as a snack or enjoy it with yogurt and fruit or milk.
