Skillet Gnocchi with Red Peppers &  White Beans

Onions

Gnocchi

White Beans

Kale

Parmesan

Garlic

Roasted Red Peppers

Red Pepper Flakes Salt & Pepper

Parsley

Olive Oil

Cook the gnocchi in a large pot of salted boiling water according to package instructions.

Warm the oil in a large skillet over medium high heat. Sauté the onions until they are soft and translucent, about 4-5 minutes.

Stir in the garlic, roasted red peppers and kale. Continue sautéing the ingredients until the kale softens, about 2-3 minutes.

Add the gnocchi, white beans, red pepper flakes, salt and pepper. Give the beans a few minutes to warm. Stir in the Parmesan and parsley before serving.
