Lemon Garlic Mushroom Spaghetti

Cook the spaghetti in boiling salted water until al dente.

While the pasta is cooking, prep the mushrooms. Heat the olive oil in a skillet over medium high heat.

Sauté the mushrooms until they start to brown, about 5 minutes.

Add the garlic, salt and pepper and continue cooking until the mushrooms have caramelized.

Pour in the lemon juice, letting it bubble and steam.

Using tongs, pull the cooked spaghetti from the pot and put it in the skillet with the mushrooms. Stir in the lemon zest and olive oil.

Finish the spaghetti with Parmesan and chopped parsley.
