Homemade Onion Jam

Rosemary

Red Wine Vinegar

Chopped Onions

Sugar

Olive Oil

Salt  Pepper

In a large skillet or sauté pan, warm the olive oil over medium-high heat.

Sauté the onions until they become very soft, translucent and some start browning at the edges, about 10-15 minutes.

Reduce the heat to medium low. Then stir in the vinegar, salt and pepper. Continue sauteing for 2-3 minutes, letting the vinegar bubble.

Stir in the rosemary sprigs and sugar.

Increase the heat to medium-high. Sauté the onions until they become very jammy, about 10-15 minutes. Remove the rosemary sprigs once the jam has finished cooking.

For an easy appetizer, spoon onion jam onto crackers with Parmesan cheese. Sprinkle with chopped parsley.
