Lemon

Fresh Rosemary

Fingerling Potatoes

Parsley

In a large bowl, combine the potatoes, rosemary, lemon juice, olive oil, salt and pepper.

Arrange the potatoes cut side down on a baking sheet. They should be in a single layer and not be overlapping.

Roast the potatoes until they are golden brown on the outside and tender in the center, about 40-45 minutes. Flip them over in the final 5-10 minutes of roasting.

Sprinkle the roasted potatoes with chopped fresh parsley before serving.
