Grilled Vegetable Ciabatta Sandwich

Bell Peppers

Salt Pepper

Red Onion


Olive Oil

Fresh Mozzarella

Yellow Squash

Baby  Spinach




Toss the zucchini, yellow squash, eggplant, peppers and onions with olive oil, salt and pepper.  You can do this on a sheet pan and carry that to the grill.

Grill the vegetables over medium high heat until they have grill marks and are tender but still crisp.

Spread pesto on the top and bottom pieces of the ciabatta. Then add the baby spinach.

Layer on the grilled vegetable. You can pull the onion slices into rings. It is up to you how thick you make your sandwich.

Add the mozzarella slices on top of the grilled vegetables. Then stack on the other piece of bread.

Cut the ciabatta into sandwiches. The size is up to you depending if you are feeding a group and what else you are serving.
