Oven-Baked Beet Chips

Red Beets

Olive Oil

Flaky Sea Salt

Kosher Salt

Chives

Golden Beets

Black Pepper

Thinly slice the beets using a mandolin or a sharp knife.

Preheat the oven to 375 degrees F.

Separate the beets by color to prevent staining.

Toss the beets in olive oil and salt. Let them sit for 15-20 minutes.

Arrange the beets on sheet pans  lined with parchment paper.

Bake the beets for 15-18 minutes. If some chips are crisp, remove them from the pan and keep baking until the rest are done.

Season the beet chips with black pepper, flaky sea salt and chives before serving.
