Best Tomatoes for Roasting

You can roast any type of ripe tomatoes from big beefsteaks to small cherry tomatoes together on the same sheet pan.

Slice medium to large tomatoes about 1/4-inch thick. Cut small cherry and grape tomatoes in half.

A serrated knife is best for cutting tomatoes.

Preheat the oven to 400 degrees F. Line a sheet pan with parchment paper.

You will also need: Olive oil Salt & Pepper

Arrange the tomatoes in a single layer without overlapping on the pan. Drizzle with olive oil and season with salt and pepper.

Halved tomatoes should be cut side up.

Roast the tomatoes for 25-30 minutes until they are wrinkled but still juicy in the middle.
