Cumin Sumac

Bring the water and lemon juice to a boil over medium-high heat. Pour in the couscous and cover the pan with a lid. Remove from the heat.

Make the couscous.

Keep the lid on the saucepan for  5 minutes. Then use a fork to fluff the couscous grains.

Heat the olive oil in a large skillet over medium high heat.

Add the white parts of the scallions, garlic, cumin, sumac, salt and pepper, cooking for 30 seconds until fragrant.

Sauté the snap peas until they turn bright green but are still crisp, about 2-3 minutes.

Stir in the couscous, lemon zest, scallion greens and parsley.
