Parsley

Cumin

Heat the olive oil in a medium saucepan over medium heat. Add the garlic, cumin, salt and pepper.

Sauté the garlic and spices until they are fragrant, about 1 minute.

Add the quinoa to the saucepan and toast for 2 minutes.

Add the water, bring to a boil and cover. Simmer on low for 12-15 minutes until the water has been absorbed.

Add the lemon juice, lemon zest, parsley and pine nuts.

Remove the quinoa from the heat. Let stand covered for 5 minutes.

As you stir the ingredients together, fluff the quinoa grains with a fork.
