Loaded  Sweet Potato Skins

Olive Oil

Salsa

Spinach

Black Beans

Sweet Potatoes

Shredded Cheese

Scallions

Cilantro

Salt Pepper

Prick the potatoes all over with a fork. Bake for 45-55 minutes in the oven until tender.

Preheat the oven to 375 degrees F.

Place the potatoes on a baking sheet cut side down and brush with olive oil.

Halve the potatoes lengthwise and scoop out the flesh.

Heat the olive oil over medium high heat. Sauté the scallions until they start to soften, about 2 minutes.

Add the spinach and continue sauteing for a couple minutes until the leaves wilt.

Stir in the sweet potato flesh along with the salsa, salt and pepper.

Spoon the filling into the sweet potatoes.

Top the sweet potatoes with black beans.

Sprinkle the sweet potatoes with shredded cheese.

Bake the potatoes until the cheese has melted, about 5-7 minutes.

Garnish with chopped cilantro and scallion greens.
