Mini Frittatas with Spinach & Parmesan

Baby Spinach

Parmesan

Preheat the oven to 325 degrees F. Grease a mini muffin pan with non-stick cooking spray. Combine the eggs, Parmesan, salt and pepper in a large bowl.

Whisk everything together.

Fill the muffin cups with chopped baby spinach.

Pour the egg mixture over the spinach.

Sprinkle on the chopped chives.

Bake the frittatas for 15-20 minutes until they are just set.
