Baked Potato Chips

Potatoes

Olive Oil

Salt  Pepper

Russet Potatoes or Yukon Gold Potatoes

Flaky Sea Salt

Paprika Onion Powder Garlic Powder Cayenne Pepper

Preheat the oven to 425 degrees F. Grease 2 sheet pans with non-stick cooking spray.

In a small bowl, stir the paprika, onion powder, garlic powder, cayenne pepper, salt and pepper.

Thinly slice the potatoes with a mandolin or a sharp knife.

Pat the excess moisture off the sliced potatoes. This is important, so your chips turn out crispy and crunchy.

Stir together the spice mixture, olive oil and potatoes. You can use your hands to make sure every surface is coated evenly.

Arrange the potatoes in a single layer across both sheet pans. They should not overlap.

Bake the potatoes for 8-10 minutes, until they start to brown. Turn them over and bake for 3-4 minutes.

If some chips brown and crisp up quicker than others, go ahead and take them off the pan.

Sprinkle the chips with flaky sea salt before serving.

You can also finish them with grated Parmesan and fresh herbs.
