Olive Oil

Flaky Sea Salt

Peel the sweet potatoes. Cut them into 1/4-inch thick batons. Make sure to cut them the same thickness. It's ok if they vary in length.

Soak the potatoes in a large bowl of cold water for 30 minutes.

Drain the sweet potatoes and pat them dry with a towel.

Preheat the oven to 425 degrees F.

Whisk together the oil, paprika, cumin, onion powder, garlic powder, cayenne pepper, black pepper and cornstarch in a large bowl.

Toss the sweet potatoes in the oil-spice-cornstarch mixture, coating them all over.

Spread the potatoes in a single layer across 2 sheet pans. They should not be overlapping.

Flip them over and continue baking for 10-15 minutes until they are crispy on the outside.

Bake the potatoes for 15 minutes until they start to brown.

Toss the fries with flaky sea salt and chives.
