Pomegranate Seeds

To make the vinaigrette, whisk together the mustard, balsamic vinegar, olive oil, salt and pepper in a small bowl.

To assemble the salad, combine the arugula, pear slices, red onions, pomegranate seeds, toasted walnuts, Gorgonzola and parsley in a large bowl.

Drizzle the balsamic vinaigrette into the salad, tossing to combine. Go easy on the vinaigrette, you can always add more.
