Pearl Couscous

Warm oil in a large pot over medium heat. Toast the couscous for a couple minutes. Pour in the water and bring to a boil. Reduce heat to low and cover. Simmer until the couscous is tender.

Heat the oil in a large skillet. Sauté the minced garlic, red pepper flakes, salt and pepper for 30 seconds until fragrant.

Add the tomatoes and olives. Give them 2-3 minutes to warm through while stirring them with the garlic and seasonings.

Stir in the couscous, feta, parsley and chives. Make sure the tomatoes and olives are evenly mixed throughout the couscous.
