White Wine Vinegar

Minced Garlic


Toasted Pine Nuts

Whisk the white wine vinegar, mustard, garlic, olive oil, salt and pepper in a small bowl.

Make the vinaigrette.

Use a y-shaped vegetable peeler to slice the zucchini into long, paper-thin ribbons. Put them in a bowl.

Make the salad.

Toss the zucchini with about half the vinaigrette.

Add the toasted pine nuts, crumbled feta cheese and chives.

Optional additions include raw or roasted cherry tomatoes, pitted olives or thinly sliced peaches

Stir together the salad, adding more vinaigrette if you want.
