Tahini Roasted Curried Cauliflower

Preheat the oven to 425 degrees F. Cut the cauliflower into 1/2-inch thick slices. It's ok if some of them break apart.

To make the marinade, stir together the tahini, olive oil, curry powder, cumin, salt and pepper in a large bowl.

Stir the cauliflower into the tahini-curry marinade. Make sure that every piece is well coated.

Arrange the cauliflower on a sheet pan greased with non-stick cooking spray. It should be in a single layer and not overlapping.

Roast the cauliflower for 20-25 minutes, flipping over halfway through cooking. It should be well browned.

Garnish with chopped parsley before serving.
