Acorn Squash

Maple Syrup

Pepitas Walnuts

Goat Cheese

Parsley Scallions

Pomegranate Seeds

Olive Oil

Cayenne Pepper Salt Pepper


How To Cut Acorn Squash

Trim off the top & bottom.

Halve the squash.

Scoop out the seeds.

Slice into  half rings.

Whisk together the olive oil, maple syrup, cayenne pepper, salt and black pepper.

Add the squash and stir it around in the mixture, coating the slices.

Arrange the squash on a sheet pan in a single layer.

At 375 degrees F, roast the squash for 20 minutes.  Flip over the squash and continue roasting for 15 minutes until it is tender and brown in spots.

Arrange the squash on a serving platter. Top with walnuts, pepitas, pomegranate seeds, goat cheese, scallions and parsley.
