Shaved Cauliflower Salad

Cauliflower

Mustard

Golden Raisins

Garlic

Red Onions

Walnuts

Parsley

Parmesan

Arugula

Red Pepper Flakes

White Wine VInegar

To pickle the raisins, stir the vinegar, honey, hot water and red pepper flakes in a small bowl. Add the raisins and let them soak.

Make sure to drain the raisins before you add them to the salad.

Break the head of cauliflower into large florets. Then slice them with a mandolin and use a knife to thinly slice the smaller pieces.

In a large bowl, combine the cauliflower, pickled raisins, arugula, red onions, Parmesan, walnuts and parsley.

To make the vinaigrette, whisk the garlic, mustard, vinegar, olive oil, salt and pepper in a small bowl.

Drizzle the vinaigrette into the salad, stirring to combine.
