Southwest  Pasta Salad

Olive Oil

Red Peppers

Cumin Salt Pepper

Pasta

Corn

Garlic

Tomatoes

Avocado

Limes

Black Beans

Radishes

Scallions

Cilantro

Cook the pasta in salted boiling water until al dente according to package instructions. Drain the pasta and rinse it with cold water.

Rub the corn with olive oil. Grill it over high heat, turning occasionally, until it is lightly charred all over.

When the corn is cool enough to handle, slice off the kernels.

Combine the avocado, garlic, lime juice, cilantro, cumin, salt, pepper and olive oil in a food processor.

Puree the ingredients until the dressing is very smooth.

Stir the avocado lime dressing into the pasta.

Add the the corn, black beans, tomatoes, radishes, scallions and cilantro.

Stir everything together until the pasta salad is fully combined.
